Introduction

Ssam-mu (쌈무) are paper-thin rounds or squares of Korean radish pickled in a sweet vinegar brine. “Ssam” means wrap and “mu” means radish, and that is exactly how they are used: you lay a slice flat, add a piece of grilled meat and roll it up. At Korean BBQ restaurants a bowl of white or pale-pink ssam-mu often sits next to the lettuce, and it is the classic partner for smoked duck and pork belly. Their crisp, sweet-sour bite cuts through rich meat beautifully.

Ssam-mu at a Glance

What it is

  • Thinly sliced Korean radish pickled in sweet vinegar, used as a wrap

Main ingredients

  • Korean radish, vinegar, sugar, salt, water; beet for the pink version

Taste

  • Sweet, tangy, refreshing and crisp

Main uses

  • Wrapping grilled pork, duck and chicken; ssam-mu rolls; side dish

What is Ssam-mu Made Of?

Ssam-mu is made from Korean radish sliced so thin it is almost see-through, then soaked in a simple brine of vinegar, sugar, salt and water. It is a quick pickle rather than a fermented one, so it tastes clean and bright. It is easy to confuse with other Korean radish pickles:

  • White ssam-mu: the plain, classic version.
  • Pink ssam-mu: tinted with beet (or food coloring in some commercial brands); same flavor.
  • Chicken-mu: cubed sweet pickled radish served with fried chicken – see our Korean chicken shop guide.
  • Danmuji: the yellow pickled radish used in gimbap, firmer and often aged – see our danmuji guide.

What Does Ssam-mu Taste Like?

Ssam-mu is sweet first, then pleasantly sour, with a mild radish crunch and only a faint peppery note. Because the slices are so thin, they are tender and flexible enough to fold around food without cracking. Wrapped around fatty grilled meat, they work like a palate cleanser in every bite.

Easy Homemade Ssam-mu Recipe (Makes about 1 quart)

Ingredients

  • 1 lb (450 g) Korean radish or daikon, peeled
  • 1 thin slice of raw beet (optional, for pink color)

Pickling brine

  • 1 cup water
  • 1/2 cup white or rice vinegar
  • 1/2 cup sugar
  • 1 tsp salt

Instructions

  1. Cut the radish into a block about 3 inches wide, then slice it as thinly as possible (about 1/16 inch) with a mandoline. Use the hand guard – mandoline blades are very sharp.
  2. Stack the slices neatly in a clean glass jar or container, tucking the beet slice in the middle if using.
  3. Heat the water, vinegar, sugar and salt in a small pot, stirring just until the sugar and salt dissolve. Let it cool until warm, not hot.
  4. Pour the brine over the radish so all the slices are covered. Cool to room temperature, cover and refrigerate.
  5. Let it pickle for at least 1 day (2–3 days is even better). Drain the slices before serving with grilled meat.

Tip: Taste the brine before pouring – add more sugar if you like it sweeter, or more vinegar for extra tang. Swapping in a fruit vinegar such as apple vinegar gives a softer, fruitier flavor; read more in our Korean vinegar guide.

How to Store Ssam-mu

Ssam-mu FAQ

What is the difference between ssam-mu and danmuji?

Ssam-mu is a quick, thin-sliced sweet vinegar pickle used for wrapping. Danmuji is a thicker, yellow pickled radish used mainly in gimbap.

Why is some ssam-mu pink?

Pink ssam-mu is colored with beet or other coloring. It tastes the same as the white version.

Can I use daikon for ssam-mu?

Yes. Choose a wide daikon so the slices are large enough to wrap meat.

What do you eat ssam-mu with?

Grilled pork belly, smoked duck, grilled chicken and bossam are the most common pairings.

Conclusion

Ssam-mu is the easiest way to make Korean BBQ at home feel restaurant-ready: just radish, vinegar and sugar, and a day of patience. Make a jar, roll it around your favorite grilled meat, and keep it in the fridge for weeks of fresh, tangy wraps. For more Korean radish pickles, see our danmuji guide.
