Introduction

Tteok-kkochi sauce (떡꼬치 소스) is the shiny red glaze brushed onto tteok-kkochi, skewers of chewy rice cakes that are pan-fried until crisp outside and soft inside. It is a nostalgic Korean street snack sold outside schools and at markets. Unlike tteokbokki sauce, which is a simmering sauce, tteok-kkochi sauce is thick, sweet and sticky, made to cling to each rice cake like a candy coating.

Tteok-kkochi Sauce at a Glance

Quick facts

  • What it is: a sweet and mildly spicy glaze for fried rice cake skewers
  • Main ingredients: ketchup, gochujang, corn or rice syrup, sugar, soy sauce, garlic
  • Taste: sweet, tangy and gently spicy, thick and sticky
  • Main uses: tteok-kkochi, sotteok-sotteok (sausage and rice cake skewers), fried rice cake snacks

What is Tteok-kkochi Sauce Made Of?

The classic street-stall formula mixes ketchup and gochujang with plenty of syrup and a little sugar, soy sauce and garlic. It is briefly simmered so the sugars thicken into a glossy glaze. Ketchup gives tang and a kid-friendly sweetness, gochujang adds savory heat, and syrup such as mulyeot makes it shine and stick.

Types of tteok-kkochi sauce

  • Classic red glaze: ketchup, gochujang and syrup.
  • Mild kids’ version: mostly ketchup and syrup, very little gochujang.
  • Soy glaze: soy sauce, syrup and garlic for a non-spicy brown version.
  • Extra-spicy glaze: with gochugaru or cheongyang chili added.

What Does Tteok-kkochi Sauce Taste Like?

It is sweet first, then tangy, with a mild, warm chili finish. The texture is the key: thick, sticky and glossy, like a cross between barbecue sauce and candy glaze. Paired with crisp-edged, chewy rice cakes, it is very snackable and much less spicy than most tteokbokki.

Easy Tteok-kkochi Recipe (Makes 6 skewers)

Ingredients

  • 36 thin cylinder rice cakes (garae-tteok or tteokbokki tteok), about 10 oz (300 g)
  • 6 wooden skewers
  • 3 tbsp neutral oil
  • Toasted sesame seeds or crushed peanuts to finish

Tteok-kkochi sauce

  • 3 tbsp ketchup
  • 1 tbsp gochujang
  • 2 tbsp corn syrup, rice syrup or honey
  • 1 tbsp sugar
  • 1 tsp soy sauce
  • 1/2 tsp minced garlic
  • 2 tbsp water

Instructions

  1. If the rice cakes are hard or refrigerated, blanch them in boiling water for 1 minute until soft, drain and pat completely dry. Water makes hot oil spatter.
  2. Thread about 6 rice cakes onto each skewer, side by side like a ladder.
  3. Simmer all the sauce ingredients in a small pan over low heat for 1–2 minutes, stirring, until slightly thick and glossy. Set aside.
  4. Heat the oil in a large skillet over medium heat. Fry the skewers 2–3 minutes per side until lightly golden and crisp. Keep a lid nearby, as rice cakes can pop and spatter; never leave the pan unattended.
  5. Transfer to a plate, brush both sides generously with the sauce, and sprinkle with sesame seeds or peanuts. Let cool for a minute before eating; the glaze is very hot.

Tip: Soak wooden skewers in water for 15 minutes first, then dry them, so they don’t scorch in the pan.

How to Store Tteok-kkochi Sauce

Leftover sauce keeps in a sealed jar in the refrigerator for about 1 week; warm it gently before brushing. Tteok-kkochi is best eaten right away because rice cakes harden as they cool. Store uncooked rice cakes according to the package, refrigerated for a few days or frozen for longer.

Tteok-kkochi Sauce FAQ

Is tteok-kkochi spicy?

Only mildly. The ketchup and syrup make it much sweeter and gentler than tteokbokki. Reduce or skip the gochujang for kids.

Can I make tteok-kkochi in an air fryer?

Yes. Brush the skewers lightly with oil and air-fry at 380°F (190°C) for about 8–10 minutes, turning once, then brush with sauce.

What is the difference between tteok-kkochi sauce and tteokbokki sauce?

Tteokbokki sauce is thinned with broth and simmered with the rice cakes; tteok-kkochi sauce is a thick glaze brushed on after frying.

Can I use this sauce on chicken?

Yes. It works as a quick glaze for chicken skewers or nuggets, similar to our dak-kkochi sauce.
