Introduction

Goguma mousse (고구마 무스) is a smooth, sweet spread made from mashed Korean sweet potato blended with cream, butter and a little sugar. It is best known from Korean pizza: the famous “goguma pizza” often has a ribbon of sweet potato mousse piped around or inside the crust. You’ll also find it in bakery breads, roll cakes and café toasts. Koreans love sweet potatoes in every form – from roasted street-cart goguma to goguma mattang – and the mousse is the creamiest of them all.

Goguma Mousse at a Glance

What it is

  • A creamy sweet potato spread used in Korean pizza, bread and desserts

Main ingredients

  • Steamed or roasted sweet potato, heavy cream or milk, butter, sugar or honey, a pinch of salt

Taste

  • Sweet, buttery and silky, with a chestnut-like sweet potato flavor

Main uses

  • Goguma pizza, toast, sandwiches, cake filling, bread, dipping for fries

What is Goguma Mousse Made Of?

Korean sweet potatoes have reddish-purple skin and pale yellow flesh that turns golden and very sweet when cooked. They are drier and starchier than orange American sweet potatoes, which makes a thick, fluffy mousse. The cooked flesh is mashed and blended with dairy and sweetener until smooth. Versions include:

  • Classic: sweet potato, cream, butter and sugar.
  • Cream cheese: a spoon of cream cheese for tang, popular in bakeries.
  • Light: milk and honey instead of cream and sugar.
  • Purple: made with purple sweet potato for a vivid color.

What Does Goguma Mousse Taste Like?

Goguma mousse tastes like the inside of a perfectly roasted sweet potato turned into frosting: sweet, nutty, buttery and smooth. On pizza it plays the same role as honey or sweet chili – a sweet contrast to salty cheese, ham and corn that Koreans find irresistible.

Easy Goguma Pizza Toast Recipe (Serves 2)

Goguma mousse (makes about 1 1/2 cups)

  • 2 medium Korean sweet potatoes (about 1 lb / 450 g)
  • 3–4 tbsp heavy cream or milk
  • 1 tbsp butter
  • 1–2 tbsp sugar or honey, pinch of salt

Toast

  • 2 thick slices of bread
  • 1 tbsp pizza sauce or ketchup
  • 2 tbsp canned corn, drained; 2 slices ham or cooked bacon, chopped (optional)
  • 1/2 cup (50 g) shredded mozzarella
  • Parsley flakes to finish

Instructions

  1. Steam or roast the sweet potatoes until completely tender (steam 25–30 minutes, or roast at 400°F / 200°C for 40–50 minutes). Peel while warm.
  2. Mash the warm flesh with butter, sugar and salt. Add cream a spoonful at a time and blend (or press through a sieve) until smooth and spreadable.
  3. Heat the oven or toaster oven to 400°F (200°C). Spread a thin layer of pizza sauce on each slice of bread.
  4. Pipe or spread a thick line of goguma mousse around the edges (like a stuffed crust) and a thin layer in the center.
  5. Top with corn, ham and mozzarella.
  6. Bake for 8–10 minutes until the cheese melts and browns. Sprinkle with parsley and serve hot.

Tip: Mash the sweet potato while it is still warm – it blends much more smoothly. If using orange sweet potatoes, use less cream since they are already moist.

Where to Buy Korean Sweet Potatoes

Korean sweet potatoes are sold at Korean and Asian grocery stores, sometimes labeled “Korean yam” or “Japanese sweet potato” (a very similar variety). Ready-made sweet potato mousse is sold in bakery-supply and Korean online shops.

How to Store Goguma Mousse

Because it contains dairy, keep goguma mousse in an airtight container in the fridge and use it within 3–4 days. It freezes well in portions for about a month; thaw in the fridge and stir before using. Store whole raw sweet potatoes in a cool, dark, dry place – not the fridge, which can harden the flesh and dull the flavor.

Goguma Mousse FAQ

What is goguma?

Goguma is the Korean word for sweet potato.

Why do Koreans put sweet potato on pizza?

Korean pizza often balances salty toppings with something sweet, and creamy sweet potato became a hit that is now a standard menu item.

Can I make goguma mousse without cream?

Yes – use milk, plant milk or a little condensed milk, adding just enough to reach a spreadable texture.

Can I use orange sweet potatoes?

You can, but the mousse will be softer and less nutty. Cut back on the liquid.

Conclusion

Goguma mousse is Korea’s sweetest spread – a few ingredients turn sweet potatoes into a pizza-crust filling, cake frosting and toast topping. Make a batch on the weekend and try it on everything. For a crispy sweet potato snack, see our goguma twigim recipe.
