Introduction

Kare (카레) is the Korean word for curry, and in Korean homes it almost always means one thing: a mild, bright yellow curry sauce made from an instant curry powder mix, simmered with potatoes, carrots, onions and meat and poured over rice. It is classic comfort food, a school-lunch favorite and one of the easiest Korean dinners to make.

Korean curry is not spicy like many Indian or Thai curries, and it is usually lighter and more turmeric-forward than Japanese curry.

Korean Curry Powder at a Glance

What it is

  • An instant curry sauce mix in powder form, used for homestyle curry rice

Main ingredients

  • Wheat flour or starch, curry spices (turmeric, coriander, cumin and others), salt, sugar, oil, flavorings

Taste

  • Mild, warm, savory and slightly sweet, with an earthy turmeric note

Main uses

  • Curry rice (kare-rice), curry udon, curry fried rice, curry tteokbokki

What is Korean Curry Powder Made Of?

Unlike a pure spice blend, Korean curry powder is a complete sauce mix. It contains curry spices plus flour or starch, so it thickens the cooking liquid into a smooth sauce as it simmers. Turmeric gives it its signature yellow color.

  • Mild (sunhan-mat) – the most popular, very gentle heat
  • Medium (botong-mat) – a little more pepper
  • Hot (maeun-mat) – noticeably spicier
  • Instant retort curry – ready-made curry pouches that only need heating

What Does Korean Curry Taste Like?

Korean curry tastes comforting and familiar: savory and slightly sweet, with warm spices and a soft earthiness from turmeric. The sauce is thick but not heavy, and the vegetables release natural sweetness as they simmer. It is usually served with kimchi or danmuji on the side to add crunch and tang.

Easy Korean Curry Rice Recipe (Serves 4)

Ingredients

  • 7 oz (200 g) pork shoulder, beef or chicken thigh, cut into ¾-inch cubes
  • 2 medium potatoes, peeled and cubed
  • 1 carrot, cubed
  • 1 large onion, cubed
  • 1 tbsp cooking oil
  • 3½ cups (about 840 ml) water
  • 1 package (about 3.5 oz / 100 g) Korean curry powder, mild
  • Steamed rice, to serve

Instructions

  1. Sauté. Heat the oil in a pot over medium heat. Cook the meat until no longer pink on the outside, then add the onion, potato and carrot and stir-fry for 3–4 minutes.
  2. Simmer. Add about 3 cups of the water, bring to a boil, then simmer for 12–15 minutes, until the potatoes and carrots are tender and the meat is cooked through (chicken to 165°F / 74°C).
  3. Dissolve the curry. Whisk the curry powder into the remaining ½ cup of cold water until smooth. This prevents lumps.
  4. Thicken. Turn the heat to low and stir in the curry mixture. Cook, stirring constantly, for 3–5 minutes until the sauce thickens. Stir to the bottom so it does not scorch.
  5. Serve. Ladle the curry over steamed rice and serve with kimchi.

Tip: Follow the water amount on your curry package. Different brands and package sizes need slightly different ratios.

How to Store Korean Curry Powder

Korean Curry FAQ

How is Korean curry different from Japanese curry?

Both are mild, roux-thickened curries served with rice. Korean curry is typically brighter yellow, more turmeric-forward and a little lighter, while Japanese curry is darker brown, richer and sweeter, and usually sold as solid roux blocks.

Is Korean curry spicy?

The mild version is barely spicy at all. Choose medium or hot if you want heat, or stir in a little gochugaru.

Can I use Korean curry powder as a spice?

Yes, in small amounts. A teaspoon seasons fried rice, fried chicken batter or stir-fried vegetables. Because it contains flour or starch, it will slightly thicken liquids.

Is Korean curry powder gluten-free?

Usually not, because most mixes use wheat flour. Check the ingredient list carefully.

Conclusion

Korean curry powder is a simple pantry mix that turns potatoes, carrots, onions and a little meat into a cozy, mild yellow curry in about 30 minutes. Serve it over rice with kimchi for a true Korean home-style meal.
