Introduction

Bibim dangmyeon (비빔당면) is a Busan street food: chewy sweet potato glass noodles tossed with fish cake, spinach, carrot and pickled radish in a spicy soy-chili sauce. It is famous at the food stalls of Busan’s Gukje Market area, where vendors mix each bowl to order. The noodles are the same dangmyeon used in japchae, but the sauce is bolder, saltier and spicier – and it takes only minutes to make.

Bibim Dangmyeon Sauce at a Glance

What it is

  • A spicy soy and chili flake dressing for mixed glass noodles

Main ingredients

  • Soy sauce, gochugaru, sugar, sesame oil, garlic, sesame seeds, sometimes a little gochujang

Taste

  • Salty-sweet, nutty and moderately spicy

Main uses

  • Bibim dangmyeon, spicy japchae, quick noodle salads

What is Bibim Dangmyeon Sauce Made Of?

Unlike the sweet-sour gochujang dressing of bibim guksu, this sauce is soy-based. Soy sauce gives salt and color, gochugaru (Korean chili flakes) adds heat and red color, sugar balances them, and plenty of sesame oil and seeds make it nutty. Vendors’ versions differ:

  • Soy-gochugaru: the classic market style – the one below.
  • With gochujang: a spoon of gochujang for a thicker, sweeter coating.
  • Extra fish cake broth: some stalls add a splash of hot eomuk broth so the noodles stay glossy.

What Does Bibim Dangmyeon Sauce Taste Like?

It tastes like a spicy, savory japchae. The noodles are bouncy and slippery, the sauce is salty-sweet with a medium chili kick, and crunchy pickled radish and vegetables add freshness. It is eaten warm or at room temperature.

Easy Bibim Dangmyeon Recipe (Serves 2)

Ingredients

  • 5 oz (150 g) dangmyeon (sweet potato glass noodles)
  • 2 sheets eomuk (Korean fish cake), cut into strips
  • 1 handful spinach
  • 1/4 carrot, julienned
  • 2 tbsp danmuji (yellow pickled radish), julienned
  • A little chopped kimchi (optional)
  • Roasted seaweed strips, to garnish

Bibim Dangmyeon Sauce

  • 3 tbsp soy sauce
  • 1 1/2 tbsp gochugaru
  • 1 1/2 tbsp sugar
  • 1 tsp minced garlic
  • 1 1/2 tbsp sesame oil
  • 1 tbsp toasted sesame seeds
  • Optional: 1 tsp gochujang

Instructions

  1. Soak the glass noodles in warm water for 20–30 minutes, then boil 5–6 minutes until soft and chewy. Drain and cut once or twice with scissors.
  2. Blanch the spinach for 20 seconds, rinse in cold water, squeeze dry and season with a pinch of salt. Blanch the fish cake strips for 30 seconds to remove excess oil.
  3. Mix all sauce ingredients in a large bowl.
  4. Add the warm noodles to the bowl and toss well with the sauce.
  5. Arrange the spinach, carrot, fish cake, pickled radish and kimchi on top, garnish with seaweed and mix at the table.

Tip: Toss the noodles while they are still warm – they absorb the sauce better and won’t clump.

How to Store Bibim Dangmyeon Sauce

The mixed sauce keeps about 1 week in a sealed jar in the refrigerator. Dressed noodles are best eaten the same day; refrigerated leftovers turn firm, so microwave briefly with a splash of water to soften them again. Dry dangmyeon keeps for a year in the pantry.

Bibim Dangmyeon FAQ

Is bibim dangmyeon served hot or cold?

It is usually served warm or at room temperature, right after mixing.

How is it different from japchae?

Japchae is stir-fried with a sweet soy sauce and is not spicy. Bibim dangmyeon is simply mixed (not stir-fried) with a spicy soy-chili sauce and topped with fish cake and pickled radish.

Are glass noodles gluten-free?

Pure sweet potato starch noodles are naturally gluten-free, but soy sauce and fish cake usually contain wheat. Use tamari and check labels if needed.

Conclusion

Bibim dangmyeon sauce brings Busan’s market energy to your kitchen: soy sauce, chili flakes, sugar and sesame oil turn chewy glass noodles into a spicy, satisfying bowl in 15 minutes. For the classic sweet version of these noodles, see our japchae sauce guide.
