Introduction

Mayak egg sauce (마약계란 양념장) is the sweet and savory soy marinade used to make mayak gyeran, Korean marinated eggs. The name literally means “drug eggs”, a playful Korean way of saying the eggs are so good they are addictive. There is nothing unusual in them: just soft-boiled eggs soaking in a soy sauce mixture with garlic, green onion, chili and sesame seeds. The eggs became a viral side dish (banchan) in Korea and online because they are cheap, easy and incredible over a bowl of hot rice.

Mayak Egg Sauce at a Glance

Quick facts

  • What it is: a sweet soy sauce marinade for soft-boiled eggs
  • Main ingredients: soy sauce, water, sugar or syrup, garlic, green onion, chili peppers, sesame seeds
  • Taste: salty-sweet, garlicky, lightly spicy and nutty
  • Main uses: mayak eggs, rice bowls, drizzling over tofu or plain rice

What is Mayak Egg Sauce Made Of?

The base is regular Korean soy sauce (ganjang) diluted with water so the eggs do not turn too salty. Sugar, honey or Korean syrup adds sweetness and shine, and lots of chopped aromatics give the sauce its texture. A spoon of toasted sesame seeds finishes it.

Common variations

  • Classic: soy sauce, water, sugar, garlic, green onion, red and green chili, sesame seeds.
  • Onion version: adds finely chopped onion for extra crunch and sweetness.
  • Honey version: uses honey instead of sugar for a rounder sweetness.
  • Extra spicy: adds more Korean green chili (cheongyang gochu) or a pinch of gochugaru.

What Does Mayak Egg Sauce Taste Like?

It tastes like a sweeter, chunkier version of Korean seasoned soy sauce: salty and savory first, then sweet, with a sharp bite from raw garlic and chili and a nutty finish from sesame. After a night in the fridge the eggs turn amber on the outside and the jammy yolks soak up the flavor.

Easy Mayak Gyeran Recipe (Serves 3–4)

Ingredients

  • 6 large eggs
  • Ice water for cooling

Mayak egg sauce

  • 1/2 cup soy sauce
  • 1/2 cup water
  • 3 tbsp sugar or honey (or 2 tbsp sugar + 1 tbsp corn syrup)
  • 4 cloves garlic, minced
  • 3 green onions, finely chopped
  • 1/4 onion, finely chopped
  • 1 red chili and 1 green chili, finely chopped
  • 1 tbsp toasted sesame seeds
  • 1 tsp sesame oil (optional)

Instructions

  1. Bring a pot of water to a boil. Gently lower in the eggs straight from the fridge and boil for 6 1/2–7 minutes for jammy yolks (9–10 minutes if you prefer them fully set).
  2. Move the eggs into ice water for 5 minutes, then peel carefully.
  3. In a container, stir together the soy sauce, water and sugar until the sugar dissolves. Add the garlic, green onion, onion, chilies, sesame seeds and sesame oil.
  4. Add the peeled eggs. They should be mostly covered; turn them once or twice while marinating so they color evenly.
  5. Cover and refrigerate for at least 4 hours, ideally overnight.
  6. Serve halved over hot rice with a spoon of the sauce and its chopped vegetables.

Tip: Use a narrow, tall container so a smaller amount of sauce covers all the eggs. Leftover sauce is delicious spooned over tofu or mixed into rice.

How to Store Mayak Eggs and Sauce

Keep mayak eggs covered in the refrigerator at all times and eat them within 3–4 days; soft-boiled eggs should never sit out at room temperature for long. The eggs get saltier the longer they soak, so after a day you can lift them out of the sauce. Leftover sauce that held raw eggs should be kept cold and used within the same few days.

Mayak Egg Sauce FAQ

Why are they called mayak eggs?

“Mayak” means narcotics in Korean. The name is slang for food that is addictively tasty; the eggs contain only ordinary kitchen ingredients.

How long should mayak eggs marinate?

At least 4 hours for light flavor; overnight (8–12 hours) is the sweet spot.

Can I reuse the marinade?

It is best used for one batch and then as a sauce within a few days. For a second batch, make fresh sauce.

Is mayak egg sauce the same as mat-ganjang?

No. Mat-ganjang is a cooked, strained all-purpose seasoning soy sauce, while mayak egg sauce is an uncooked marinade full of fresh chopped aromatics.

Conclusion

Mayak egg sauce shows how a handful of pantry ingredients can turn plain eggs into something you crave. Mix soy sauce, water, sugar, garlic, green onion, chili and sesame, soak your jammy eggs overnight, and you have a ready-made Korean rice bowl topping for days.
