Introduction

Tteokgalbi sauce (떡갈비 양념) is the sweet, garlicky soy seasoning used to make tteokgalbi, Korea’s grilled patties of finely chopped short rib meat. The name means something like “rice-cake galbi” because the meat is pounded and pressed into flat, tender cakes. The same sauce seasons the meat mixture and is brushed on as a shiny glaze at the end. Tteokgalbi is a specialty of Damyang and Gwangju in South Jeolla Province, and today it is also a popular lunchbox item and frozen food in Korean markets.

Tteokgalbi Sauce at a Glance

Quick facts

  • What it is: a sweet soy seasoning and glaze for grilled minced beef (or pork) patties
  • Main ingredients: soy sauce, sugar or honey, Asian pear, garlic, green onion, sesame oil, black pepper
  • Taste: sweet, salty, garlicky and smoky once grilled
  • Main uses: tteokgalbi, mini meatball side dishes, rice bowls, lunchboxes

What is Tteokgalbi Sauce Made Of?

The base is very close to a classic galbi sauce: soy sauce, sugar, grated pear or apple, lots of garlic, green onion, sesame oil and pepper. Because the meat is minced, a little starch or breadcrumbs is often added to bind it. The glaze is usually a reduced version of the same sauce, sweetened with honey or mulyeot so it turns glossy on the grill.

Types of tteokgalbi sauce

  • Classic soy glaze: sweet soy seasoning, used for beef tteokgalbi.
  • Spicy gochujang glaze: soy base with gochujang and gochugaru for a red, spicy finish.
  • Pork tteokgalbi seasoning: extra ginger and rice wine to balance pork.
  • Bottled galbi or bulgogi sauce: a handy shortcut sold in Korean markets.

What Does Tteokgalbi Sauce Taste Like?

It tastes like a richer, stickier galbi marinade: sweet and salty first, then garlic and toasted sesame. On the grill the sugars caramelize, giving the patties a smoky, slightly charred edge. Pear keeps the meat juicy and soft.

Easy Tteokgalbi Recipe (Serves 4)

Ingredients

  • 1 lb (450 g) ground beef (or boneless short rib, finely chopped)
  • 1/2 lb (225 g) ground pork
  • 2 green onions, finely chopped
  • 1/4 onion, finely minced
  • 2 tbsp potato starch or 3 tbsp breadcrumbs
  • 1 tbsp neutral oil for the pan
  • Toasted pine nuts or sesame seeds, to garnish

Tteokgalbi sauce

  • 4 tbsp soy sauce
  • 2 tbsp sugar
  • 3 tbsp grated Asian pear (or apple)
  • 1 tbsp minced garlic
  • 1 tbsp rice wine
  • 1 tbsp sesame oil
  • 1/4 tsp black pepper

Glaze

  • 2 tbsp soy sauce
  • 2 tbsp honey or mulyeot
  • 2 tbsp water
  • 1 tsp minced garlic

Instructions

  1. Mix the sauce ingredients in a large bowl until the sugar dissolves.
  2. Add the beef, pork, green onion, onion and starch. Knead and slap the mixture against the bowl for 2–3 minutes until sticky; this keeps the patties from breaking.
  3. Shape into 8 flat oval patties about 1/2 inch (1.5 cm) thick and press a shallow dent in the middle of each so they cook evenly.
  4. Heat the oil in a pan over medium-low heat. Cook the patties 4–5 minutes per side, covered for part of the time, until cooked through. Ground meat should reach 160°F (71°C) inside.
  5. Simmer the glaze ingredients in a small pan for 1–2 minutes until slightly syrupy. Brush over the patties and cook 30 seconds more per side.
  6. Garnish with pine nuts or sesame seeds and serve with rice, lettuce and kimchi.

Tip: Glaze only at the very end. Sugar burns quickly, so keep the heat moderate and add the glaze when the meat is already cooked.

Tteokgalbi Sauce FAQ

Is tteokgalbi made with rice cakes?

No. “Tteok” refers to the way the minced meat is pressed into a flat cake, not to actual rice cakes, although some restaurants serve them together.

What is the difference between tteokgalbi and galbi?

Galbi is marinated short rib on the bone or in strips. Tteokgalbi uses the same kind of seasoning, but the meat is minced and shaped into patties.

Can I use bulgogi sauce for tteokgalbi?

Yes. A bulgogi marinade works well; use about 5–6 tablespoons per 1.5 lb of meat.

Can I cook tteokgalbi in the oven or air fryer?

Yes. Bake or air fry at about 400°F (200°C) for 12–15 minutes, flipping once, then brush with glaze for the last 2 minutes.

Conclusion

Tteokgalbi sauce turns simple minced beef into juicy, glossy Korean patties that work for dinner, lunchboxes and rice bowls. If you like sweet soy flavors, try our galbi sauce guide and bulgogi marinade next.
