Introduction

Galbitang (갈비탕) is a clear Korean soup made by simmering beef short ribs (galbi) until the meat is fall-off-the-bone tender. The broth is light in color but rich in flavor, seasoned simply with soup soy sauce, salt, garlic and green onion. It is a classic wedding-feast and holiday dish, and today it is a comforting restaurant favorite. This guide explains how the broth is built and how to make galbitang at home.

Galbitang Broth at a Glance

What it is

  • A clear beef short rib broth used for galbitang soup

Main ingredients

  • Beef short ribs, Korean radish, onion, garlic, green onion, soup soy sauce, salt, black pepper

Taste

  • Clean, beefy and lightly sweet from radish – not spicy

Main uses

  • Galbitang, spicy galbitang, beef noodle soups, rice soups (gukbap)

What is Galbitang Broth Made Of?

The secret of a clear galbitang broth is preparation: the ribs are soaked in cold water to draw out blood, then quickly parboiled and rinsed so the final broth stays clean. They are then simmered slowly with radish, onion and garlic. The broth is seasoned at the end with guk-ganjang (soup soy sauce) and salt. Common styles:

  • Classic galbitang: clear broth with ribs, radish, glass noodles and egg garnish.
  • Maeun galbitang: a spicy version with gochugaru and chili.
  • Restaurant style: sometimes enriched with extra beef or bones, similar to sagol yuksu bone broth.
  • Instant galbitang: ready-to-heat pouches sold at Korean markets.

What Does Galbitang Taste Like?

Galbitang tastes like a refined, deeply beefy consommé. Radish adds gentle sweetness, garlic and green onion add freshness, and the soft rib meat is dipped in a little soy sauce or salt at the table. It is mild and warming – a good first Korean soup for anyone who doesn’t like spicy food.

Easy Galbitang Recipe (Serves 4)

Ingredients

  • 2.5 lb (1.1 kg) bone-in beef short ribs (English cut), cut into 2–3 inch pieces
  • 12 cups water
  • 10 oz (300 g) Korean radish (mu), cut into large chunks
  • 1 onion, halved; 1 whole bulb of garlic, cloves peeled
  • 1 large green onion (white part for broth, green part sliced for garnish)
  • 1 1/2 oz (40 g) dangmyeon (sweet potato glass noodles), soaked
  • 1 egg, for a thin omelet garnish (optional)

Seasoning

  • 2 tbsp soup soy sauce (guk-ganjang)
  • 1 tbsp minced garlic
  • Salt and black pepper, to taste

Instructions

  1. Soak the ribs in cold water for 1 hour, changing the water once or twice, to draw out blood. Trim off large pieces of fat.
  2. Bring a pot of water to a boil, add the ribs and boil 5 minutes. Drain and rinse the ribs and the pot to remove scum.
  3. Return the ribs to the clean pot with 12 cups of water, radish, onion, garlic cloves and the white part of the green onion. Bring to a boil, then simmer gently, partly covered, for 1 1/2–2 hours until the meat is very tender. Skim fat and foam occasionally.
  4. Remove the radish, slice it into thin squares and return it to the pot. Discard the onion and green onion.
  5. Season the broth with soup soy sauce, minced garlic, salt and pepper.
  6. Add the soaked glass noodles and simmer 3–4 minutes until soft.
  7. Serve in bowls topped with sliced green onion and thin strips of egg omelet, with rice and kimchi on the side.

Tip: For an extra-clear, less greasy soup, chill the broth overnight and lift off the solid fat before reheating.

Galbitang FAQ

What is the difference between galbitang and galbi-jjim?

Both use short ribs. Galbitang is a clear soup; galbi-jjim is braised in a thick, sweet soy sauce.

Is galbitang spicy?

No. Classic galbitang is mild. A spicy version (maeun galbitang) adds gochugaru.

Why soak the ribs first?

Soaking and parboiling remove blood and impurities, which keeps the broth clear and clean-tasting.

Can I make galbitang in a pressure cooker?

Yes. After parboiling, pressure cook the ribs with the vegetables for about 35–40 minutes, then release and season.

Conclusion

Galbitang broth proves that a few simple ingredients – short ribs, radish, garlic and soup soy sauce – can make a deeply comforting soup. Take your time with the soaking and simmering, and add chewy dangmyeon glass noodles for the classic restaurant finish.
