Introduction
Ojingeo bokkeum (오징어볶음) means “stir-fried squid,” and it is one of the most popular spicy rice dishes in Korean home cooking and lunch restaurants. What makes it special is the sauce: a glossy red mix of gochugaru, gochujang, soy sauce, garlic and a little sweetness that clings to tender squid and crisp vegetables. Served over rice it becomes ojingeo deopbap, and with a few slices of pork belly it turns into the famous ojingeo-samgyeop. Once you have the sauce down, the whole dish takes about 15 minutes.

What is Ojingeo Bokkeum Sauce Made Of?
The sauce is built on two Korean chili products. Gochugaru brings color and a clean, smoky heat, while gochujang adds body, sweetness and fermented depth. Soy sauce seasons it, garlic gives punch, and sugar or a Korean syrup helps it turn glossy in the hot pan. Common versions include:
- Classic home style: gochugaru, gochujang, soy sauce, garlic, sugar and sesame oil.
- Restaurant style: sweeter and stickier, often with corn syrup or oligosaccharide syrup and a splash of oyster sauce.
- Smoky “bul-mat” style: the gochugaru is first bloomed in hot oil with scallions to make a red chili oil before the squid goes in.
- Bottled stir-fry sauces: ready-made spicy seafood or “jjukkumi/ojingeo” sauces sold at Korean grocery stores.
What Does Ojingeo Bokkeum Sauce Taste Like?
It tastes bold and fiery up front, then sweet and savory, with plenty of garlic. Compared with nakji bokkeum sauce for octopus, which is often very hot, ojingeo bokkeum is usually a bit milder and sweeter, so it suits most spice lovers. The sauce also absorbs the sweet juices of onion and cabbage, which round out the heat.

Easy Ojingeo Bokkeum Recipe (Serves 3)
Ingredients
- 1 lb (450 g) cleaned squid (fresh or thawed frozen)
- 1/2 onion, sliced
- 1 cup green cabbage, cut into bite-size pieces
- 1/2 small carrot, thinly sliced
- 2 scallions, cut into 2-inch lengths
- 1 green chili, sliced (optional)
- 1 tbsp neutral oil
Sauce
- 2 tbsp gochugaru
- 1 1/2 tbsp gochujang
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp corn syrup, rice syrup or honey
- 1 tbsp minced garlic
- 1/2 tsp grated ginger (optional)
- 1 tbsp sesame oil, plus a pinch of black pepper
Instructions
- Mix all the sauce ingredients in a small bowl.
- Rinse the squid and pat it dry. Score the inside of the body in a crisscross pattern, then cut it into 1 x 2-inch pieces and the tentacles into short lengths.
- Heat the oil in a large pan or wok over high heat. Stir-fry the onion, cabbage and carrot for 2 minutes until just softened.
- Add the squid and the sauce. Stir-fry over high heat for 2–3 minutes, until the squid turns opaque and firm and curls up.
- Add the scallions and green chili, toss for 30 seconds and turn off the heat. Serve right away with rice.
Tip: Squid turns rubbery when overcooked, so keep the heat high and the cooking short. If your pan is small, cook the vegetables and squid in two batches so the pan stays hot and the dish doesn’t get watery.
